This doubles and triples very easily. Make a large batch and store in airtight glass jars to use at a later date.
Great on fish, chicken or pork. In the skillet, broiler or on the grill.
Ingredients:
2 Tbsp Paprika
2 tsp lemon pepper
1 1/2 tsp garlic powder
1 1/2 tsp ground red pepper, like cayenne
1 1/2 tsp crushed dried basil
1 tsp onion powder
1 tsp dried thyme
Procedure:
Combine all ingredients in a small bowl or plastic bag. Mix or shake to blend well. This amount makes enough
seasoning for about a pound of fish, chicken, or pork. The traditional seasoning mix contains about 2 Tbsp of salt as
well as these spices.
To Blacken an entree:
Heat a cast iron skillet on high heat for about 5 minutes, or preheat broiler or gas grill until very hot. Dip each
piece of meat, chicken or fish into melted butter or olive oil, and then into seasoning mix. The butter or oil helps
adhere the spices to the surface. Baking spray would probably do the same, without adding as many fats or calories.
Cook hot and quick without adding any oil to the pan. Turn once. Fish fillets take about 5 minutes per side.
Serving Size:
This makes enough for about 4 servings, but doubles and triples very easily. Store in an airtight glass container.
