Cucumber Dressing for Tomato Slices

Get out in the garden and pick some tomatoes, some cucumbers, some fresh basil and pull up a couple of onions that have gone way past the green onion stage.

Ingredients:

1/2 cup nayo type salad dressing, fat free works good

1 large cucumber, peeled and chopped finely

3 tomatoes, washed, cored and sliced

1/3 cup onion, chopped finely

1/3 cup fresh basil, finely chopped OR about 2 Tbsp dried and crumbled

Procedure:

Assemble and combine everything except the tomatoes, to make the dressing.   Top the tomato slices with the dressing just before, or right at, serving time.

Serving Size:
Low fat, no added salt, but Diabetics should be aware that when they have taken the fat out of prepared dressings, they have replaced it with sugar !
