Freezer Spaghetti Sauce
This makes a thick and chunky sauce that is good for pasta of any kind.
Made without salt or sugar, you can really taste the vegetables. The addition of one or two spicy hot peppers really
brings out the flavor. I no longer peel the tomatoes, but simply add the chunks after washing, coring and trimming off
any blemishes. But if you are a purist, feel free to spend the time peeling the tomatoes.
To use - Thaw and then add cooked ground beef, bison,chicken or turkey, or chunks of cooked chicken or turkey.
Reheat on the stove or in the microwave, and serve over hot cooked pasta.

Ingredients:
About 10 pounds ripe tomatoes, approximately 30 medium size
2 Tbsp olive oil
4 large onions, chopped
4 green/red/yellow or other colored bell peppers, seeded and chopped
2 spicy hot peppers, like chilies or hot Hungarian Yellows or Anchos or Jalapenos (optional)
3 to 5 large cloves garlic, OR 1 Tbsp garlic powder
1 to 2 tsp ground black pepper
1 Tbsp dried, crushed oregano
2 tsp dried, crushed thyme
1 Tbsp celery seed
12 ounces tomato paste, canned with no extra salt added
Procedure:
Wash and core tomatoes, then peel by placing in boiling water for a couple
of minutes. When the skin begins to split, plunge them into a sink of cold water. You can do a whole pot full
at a time to make it quicker. Use a slotted spoon to remove them from the boiling water. In a large stock type
pot, heat the olive oil, add the chopped onion, and lightly saute. If using garlic cloves, mince and add now, or add
garlic powder later with the spices. Add the tomatoes after peeling and cutting into quarters. When about one
half of the tomatoes are added, put in the peppers, both green bells and hot peppers, and the garlic powder or cloves.
This needs to cook about 45 minutes, so continue to add quartered tomatoes and stir often. Bring to a boil after all
tomatoes are added and then add the spices and the tomato paste, reduce to simmer for another 15 minutes or so. It should
look like something that would taste good tonight.
Allow to cool to room temperature, pack into freezer containers or zipper
bags and store in the freezer for optimum 3 months but it will last a bit longer.
Serving Size:
About 3/4 cuup per person, before protein is added. An average size
serving of protein is 3 ounces, cooked, and if prepared with 1 cup of cooked pasta, gives you approximately 2 starch/bread,
3 protein, and lots of veggie exchanges for a Diabetic diet.
