Aunt Lynn's Parmesan Chicken

Quick, easy and tasty.  Cook in the oven or in the microwave and serve with rice pilaf or pasta and a light topping and a green salad.

For 2 Servings

Ingredients:

1/2 pound boneless, skinless chicken breasts.
2 Tbsp grated Parmesan cheese
1/4 cup seasoned bread crumbs
1 egg, well beaten, OR 2 egg whites OR 1/4 cup egg substitute
1 - 7 ounce can tomato sauce
1/4 tsp dried oregano
1/2 cup shredded mozzarella cheese

Procedure:

Microwave

Using the flat side of a meat mallet, pound out the chicken breasts to about 1/2 inch thick.  Combine the bread crumbs and parmesan cheese, mixing well, and coat both sides of chicken.  Place chicken in a microwave baking dish, uncovered, and microwave 5 to 6 minutes on high, turning once during cooking.  Drizzle with tomato sauce, sprinkle with oregan and top with shredded cheese.  Microwave, uncovered, for about 30 seconds to melt cheese.

1 pound boneless, skinless chicken breasts
1/4 cup grated Parmesan cheese
1/2 cup seasoned bread crumbs
1 egg, well beaten OR 2 egg whites OR 1/4 cup egg substitute
1 - 7 ounce can tomato sauce
1/2 tsp dreid oregano
1 cup shredded mozzarella cheese

 
 
Conventional Oven
 
With the flat side of a meat lallet, pound the chicken breast to about 1/2 inch thick.  Combine bread crumbs and parmesan cheese and mix well.  Dip chicken in beaten egg and then in bread crumb mixture, coating well.  Arrange chicken in an oven baking dish, in a single layer.  Spoon tomato sauce over top, sprinkle with oregano and top, evenly, with shredded mozzarella.  Bake at 350 F for about 30 minutes.
