For 2 Servings
Ingredients:
1/2 pound boneless, skinless chicken breasts.
2 Tbsp grated Parmesan cheese
1/4 cup seasoned bread crumbs
1 egg, well beaten, OR 2 egg whites OR 1/4 cup egg substitute
1 - 7 ounce can tomato sauce
1/4 tsp dried oregano
1/2 cup shredded mozzarella cheese
Procedure:
Microwave
Using the flat side of a meat mallet, pound out the chicken breasts to about 1/2 inch thick. Combine the bread crumbs
and parmesan cheese, mixing well, and coat both sides of chicken. Place chicken in a microwave baking dish, uncovered,
and microwave 5 to 6 minutes on high, turning once during cooking. Drizzle with tomato sauce, sprinkle with oregan and
top with shredded cheese. Microwave, uncovered, for about 30 seconds to melt cheese.
