Chinese Chicken - Crock Pot

This is a No-Peek recipe requiring a tight fitting lid for your slow cooker.  Alternatively, cover the crock pot with foil or heat resistant plastic wrap before placing the lid over the opening.

Ingredients:

2 pounds chicken pieces, boneless and skinles, thighs or breasts, use about 3 pounds chicken with bone and skin intact
1/4 cup Hoisin sauce
1/4 cup plum chutney or plum sauce
1/4 cup low sodium soy sauce
2 inches fresh ginger root, peeled and grated OR 1 tsp ground ginger
juice of 1 lime OR 2 Tbsp lime juice
3 Tbsp cornstarch

Procedure:

Combine everything except the chicken, in a plastic bag, shaking to mix.  Add the chicken and thoroughly coat all sides.  Add everything to the crock pot, including the marinade and cook on low for 5 to 6 hours.  Serve with hot steamed rice and a vegetable side dish.
