Serve this over fresh baked biscuits or toasted sandwich buns.  Lower fat, better for you, and still tastes good.

Ingredients:

3 cups reconstituted TVP, flavored or unflavored, bits are best but all will work
spices if needed  for flavor
1 tsp rubbed sage
1 tsp crumbled basil
1/2 tsp black pepper
4 Tbsp vegetable oil
4 Tbsp finely minced onion
4 Tbsp finely chopped bell pepper, any color
4 Tbsp flour
2 cups milk
dash of ground nutmeg

Procedure:

Heat oil in skillet and saute onion and pepper over medium high heat, for about 5 minutes or until vegetables are soft.  Reduce heat to low.  Stir in the flour and the reconsitituted TVP, stirring constantly and cooking for about 5 minutes.  Slowly add the milk, in a steady stream, still stirring to keep lumps from forming.  Stirring frequently, cook for about 7 minutes longer.  The mixture should be thick and creamy.  Serve over toast triangles or toasted sandwich buns.

Serving Size:

6 small  servings OR 3 large servings
