Tomato Pie

This is delicious but definitely not low fat or low sodium.  In order to make a complete meal, complement the pie with a good protein source.

Ingredients:

1 prebaked 9 inch deep dish pie crust
4 red ripe tomatoes, sliced about a half inch thick
10 fresh basil leaves, or 1 Tbsp dried and crumbled basil leaves
1/2 cup chopped green onions
1 cup grated mozzarella cheese
1 cup grated medium cheddar cheese
1 cup mayonaise
salt and pepper, to taste

Procedure:

Preheat oven to 350 F.  Place tomato slices in a colander, sprinkle with salt and allow to drain for about 10 minutes.  Arrange the tomato slices over the bottom of the pie crust, top with a layer of basil leaves and then the green onions.  In a separate mixing bowl, combine the mayonaise and grated cheeses, mixing well.  Spread the cheese mixture evenly over the tomatoes, basil and onions in the pie crust.  Season with salt and pepper, if desired.  Bake about 30 minutes or until lightly browned.  Serve warm.

340 calories, 4 g protein, 24 g fat ( 5 g saturated), 28 g carbohydrate, 469 mg sodium, 12.5 mg cholesterol
