I usually make these with ground turkey breast, but they can also be made with ground turkey dark meat or a combination of ground turkey and rehydrated soy protein. (TVP).  If you make a double batch, the leftovers freeze well for a later date.

Ingredients:

1 pound ground turkey, chicken or beef
1 clove garlic, minced
1 egg or substitute
1 cup dry bread crumbs
1/4 tsp dried oregano
1/2 cup grated parmesan cheese
1/4 tsp black pepper
1/4 cup minced fresh parsley or 1 1/2 Tbsp dried
2 Tbsp olive oil

Procedure:

Mix everything together except the olive oil  The easiest way to mix, is with your hands.  Form the meatballs so they they are all about the same size and will be done at the same time.  Heat olive oil in a large skillet and brown the meatballs on all sides, gently stirring so meatballs don't break apart.  Add to spaghetti sauce, stews or submarine sandwiches.l
