Beer Soused Mahi Mahi

Even if you don't like beer or Mahi Mahi, you will like this.

Ingredients:

1 pound Mahi Mahi fillets, also called Dorado or Dolphin
     - washed and cut into strips
16 ounces beer
1 yellow onion, thinly sliced
1/2 tsp thyme

Procedure:

Combine beer, onion and thyme in a large skillet and reduce to about half the volume over medium high heat.  Add the Mahi Mahi strips and simmer for about 3 minutes, or longer if the strips are thicker.  Remove the fish and set aside, keeping warm.  Continue to reduce the beer sauce until you have about 1/2 cup.  Pour over the Mahi Mahi strips and serve.
