Lighten up without losing taste.
Ingredients:
1 pound beef round steak, boneless and trimmed of fat
1/2 poound fresh mushrooms
1 onion, thinly sliced
1 cup buttermilk, divided
2 Tbsp flour
1/2 cup beef broth
1/2 cup water, white wine or apple juice
1 Tbsp ketchup
Hot cooked noodles, about 2 1/2 cups before cooking
Procedure:
Cut beef into thin strips, across the grain, about 1/8th inch thick and 3 inches long. This is easier to do if the
meat is still slightly frozen. Wash and slice the mushrooms. Lightly spray a large skillet with cooking spray and
sautee the beef , mushrooms and onion until lightly browned. Add a few drops of wine, water or broth if the meat is
sticking. Add broth, water, ketchup and pepper if desired, cover, and simmer for about 45 minutes or until beef is tender.
Mix the flour into about a 1/4 cup of the buttermilk until the mixture is smooth. Add to the pan along with the rest
of the buttermilk, stir until mixture thickens. Pour over hot noodles and serve.
Serving Size: about 1/2 cup meat and sauce over about 1/2 cup noodles contains approximately;
