Tabbouleh Salad

Delicious and nutritious.

Ingredients:

1 cup bulgur or cracked wheat
2 tomatoes
1 sweet onion or green onions
1 green pepper
1/2 cup fresh parsley
2 Tbsp fresh mint
1/4 cup olive oil
1/4 cup lemon juice
fresh ground black pepper

Procedure:

Soak bulgur in cold water to soften it.  It will swell, so make sure there is about an inch of water above the grain.  Soaking should take anywhere from a half hour to 2 hours.  Drain and squeeze out any excess water.  Chop tomatoes, onions and peppers, mince parsley and mint.  Toss with bulgur to mix well.  Gently stir in the lemon juice, olive oil and pepper.  Serve at room temperature or chilled.
