Baked Salmon Dijon

This is quick, easy and tasty.  In spite of being low fat, low sodium and good for you !

Ingredients:

1 cup fat free sour cream
2 tsp dried dill weed
3 Tbsp chopped green onions
2 Tbsp Dijon mustard
2 Tbsp lemon juice
1 1/2 pounds salmon fillet, with skin on and cut in center
1/2 tsp garlic powder
1/2 tsp black pepper or lemon pepper
nonstick baking spray, as needed

Procedure:

In a small bowl, whisk together sour cream, dill, green onions, mustard and lemon juice until well blended.  Preheat oven to 400 F and spray a baking sheet with nonstick baking spray.  Place salmon skin side down on baking sheet, sprinkle with garlic powder and pepper, spreading the sauce over the top.  Bake until salmon is just opaque or about 20 minutes.

Serving Size: one sixth of recipe, about 4 ounces yields approximately ;
