Fluffy Orange Frosting

Looks like a lot of trouble, but it is not really.  A version of the old 7 minute boiled icing.  If you do not have a double boiler, place a pot in a pot, with a couple inches of water in the bottom pot.  This makes plenty of frosting for an angel food cake or a two layer cake or a sheet cake.

Ingredients:

1/4 cup egg whites (about 2), or egg substitute
1 1/2 cups granulated sugar
1/4 cup water
1/4 cup frozen orange juice concentrate, thawed but not reconstituted

Procedure:

Combine all ingredients in the top of a double boiler and beat for 1 minute with and electric hand mixer or rotary beater, to mix well.  Place over boiling water and continue beating until mixture forms stiff peaks, about 7 or 8 minutes.  Remove from heat, continue beating until the frosting is of spreading consistency, another 2 to 3 mintes.

1 to 2 Tbsp grated orange rind can be added for a more intense flavor.
