Pinto Bean Soup

This is a good candidate for the crockpot and economical, too.

Ingredients:

1 pound of dry Pinto Beans

1 pound smoked turkey sausage, Kielbasa type sausage

1/2 cup chopped onion

1/2 cup diced carrot

6 to 8 cups water

1/4 tsp ground black pepper

 

Procedure:

Wash beans and place in pot or crock pot.  Add water, onions, carrots and peppr.  Cut smoked sausage into 1 inch chunks, cutting crosswise and add to the pot.  If cooking on the stove, bring to a boil, reduce heat and simmer about 3 hours, covered, until well thickened and the beans are soft.

Serving Size: one fourth of recipe is approximately;
