Big Chewy Oatmeal Cookies

No cholesterol, but certainly not no calorie.  But everyone needs a small treat every now and then.  I have not tried this with a brown sugar substitute, but one of these days....

Ingredients:

1 1/3 cup firmly packed brown sugar or substitute
1/2 cup water or fruit juice
1 1/2 tsp vanilla extract
1/2 cup canola oil
3/4 cup all-purpose flour
2 Tbsp cornstarch
3 cups rolled oats
3/4 tsp baking soda
1/4 tsp ground allspice (or nutmeg)
1/2 tsp ground cinnamon
1 cup raisins, plumped in hot water for 10 minutes and patted dry
1 cup bran flakes cereal

Procedure:

Preheat oven to 350 F and very lightly spray a baking sheet with nonstick baking spray.  In a bowl, mix together brown sugar, water or juice, vanilla.and oil.  Fold in flour, cornstarch, oats, baking soda and spices.  Fold in raisins and bran flakes.  This will be a very thick and stiff batter.  Place about 1/3 cup of batter, in small mounds about 2 inches apart, on baking sheet. Press the centers down slightly.  Bake 15 or 20 minutes until cookies are 'set' and dry to the touch.  They will become crisper as they cool, so do not overbake if you want them to stay chewy.
