Banana Bread

This is so simple and easy, you would think it won't turn out, but it does !  Makes one loaf and can be made with Splenda or sugar.

Ingredients:

3 ripe bananas, peeled and mashed
2 eggs, lightly beaten (can use 4 egg whites only, or 1/2 cup egg substitute)
2 cups all-purpose flour
3/4 cup sugar (or substitute)
1 tsp baking soda
1/2 cup chopped nuts

Procedure:

Preheat oven to 350 F and prepare an 8x5x3 inch loaf pan by greasing or spraying with baking spray.
In a medium size mixing bowl, beat eggs or egg substitute into mashed bananas.  In another bowl, mix together flour, sugar (or substitute) and baking soda, combining well.  Add flour mixture to banana mixture, this will be a very stiff batter so make sure all the flour mixture is incorporated.  Fold in the chopped nuts, spoon into prepared pan and bake about one hour, until a knife inserted into the center comes out clean.  Cool for about 10 minutes before removing from pan.

Made with sugar and whole eggs - 231 calories, 5 g protein, 5 g fat (< 1 g saturated), 43 g carbohydrate, 140 mg sodium, 43 mg cholesterol
Made with Splenda and egg substitute - 186 calories, 6.5 g protein, 5.5 g fat (.8 g saturated), 35 g carbohydrate, 162 mg sodium, 43 mg cholesterol
