Using applesauce and skim milk, with no oil, makes these healthy and nutritious as well as a tasty treat
Ingredients:
2 cups all-purpose flour
1/4 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
2 egg whites or 1/4 cup egg substitute
1 cup sugar or equivalent artificial sweetener
1/2 cup applesauce, unsweetened, at room temperature
1/3 cup skim milk, at room temperature
2 cups peeled, cored and chopped apples (about 3 to 4 apples)
Procedure:
Preheat oven to 350 F and prepare muffin pan by spraying with no-stick baking spray. Combine dry ingredients (flour,
baking soda, baking powder, cinnamon, ginger and cloves), mixing well to combine. In another bowl, combine egg whites,
sugar, applesauce, milk and apples. Stir the dry ingredients mixture into the wet ingredients, just until moistened.
Fill muffin cups about 2/3 full and bake about 25 to 30 minutes, until top of muffin springs back when gently tapped.
