Garden Trash

Much tastier than it sounds ! 

Ingredients:

1 green tomato
1 large potato
6-8 pods okra
4 small zucchini (6 to 8 inch)
1 onion
1/2 cup cornmeal
fresh ground black pepper
oil for frying

Procedure:

Wash, core and chop green tomato into 1/2 inch cubes.  Peel and chop potato and onion into 1/2 inch cubes.  Wash and slice okra into 1/4 inch sections.  Mix chopped veggies with pepper and cornmeal to evenly coat, adding a little extra cornmeal if needed.  Heat a large skillet and cover bottom with frying oil of your choice.  Add veggie mixture and cook on medium until browned lightly, about 10 to 15 minutes.  Cover and reduce heat to low, coooking until all veggies are tender, another 10 to 15 minutes.
