Fruit Cookies

Low fat, no added sugar and can be made with almost any variety of dried fruits.

Ingredients:

3 medium ripe bananas, peeled and mashed (3 cups)
1/3 cup oil
1 tsp vanilla extract
1 1/2 cups rolled oats, uncooked
1/2 cup fine grained oat bran
1 1/2 cups coarsely chopped dried fruit (analysis based on prunes, apricots and pears, mixed)
1/2 cup chopped nuts

Procedure:

Preheat oven to 350 F and lightly spray 2 cookie sheets with non stick baking spray.  In a large mixing bowl, stir the oil and vanilla extract into the mashed bananas, until smooth and creamy.  Mix in the oats, oat bran, dried fruit or fruits and nuts.  Drop by rounded tablespoon onto prepared pan, about an inch apart.  Bake about 20 to 25 minutes or until edges and bottoms are lightly browned.
