A quick bread loaf, rich and tangy.
Ingredients:
2 1/2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
2 eggs, beaten
1/3 cup butter or margarine, melted
2 cups shredded sharp cheddar cheese
1 1/2 cups chopped, peeled apples
3/4 cup chopped nuts
3/4 cup milk
Procedure:
Preheat oven to 350 F and spray a 9x5 inch loaf pan with non stick baking spray.In a large mixing bowl, combine flour,
sugar and baking powder, mixing well. In a seperate bolw, combine eggs, milk and melted butter or margarine, mixing
well. Stir wet ingredients into dry ingredients and then fold in the remaining ingredients. Spoon into prepared
loaf pan and bake for 65 to 70 minutes, or until knife inserted into the center of the loaf comes out clean. Let stand
for 5 minutes before removing from pan to finish cooling.
