Apple Oatmeal Refrigerator Cookies



MMMMMMMM !!  This is a thin, crisp cookie that spreads out a lot as it bakes, so make sure you leave room.

Ingredients:

1 cup margarine, butter or shortening
1 cup granulated white sugar
1 cup brown sugar
2 eggs, beaten
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
3 cups quick oats, uncooked
1 cup peeled, cored and chopped apples

Procedure:

Prepare dough by creaming margarine, butter or shortening and the two sugars and then mix in the eggs.  Fold in the flour and baking soda and then the oats and apple pieces.  Divide the dough into 3 equal amounts and roll each up on a sheet of waxed paper about 16 inches long, to form a log shape.  Refrigerate at least 2 hours, or overnight, and then unwrap and slice into 1/2 inch thick rounds and bake at 350 F for 8 to 10 mintes.  Cool on rack before storing.

 

Variations 1 cup chocolate chips in place of apples or 1 cup chopped nuts in place of apples
