Citrus Marinade

This is good for chicken, pork, turkey cutlets or firm fleshed flish, in the oven or on the grill

Ingredients:

1 Tbsp olive oil
1 large clove garlic, minced
1/3 cup orange juice
2 Tbsp chopped fresh parsley  (scant 1 Tbsp dried)
1/2 tsp orange zest
1/2 tsp lemon zest
1/2 tsp dried oregano
1/4 tsp ground black pepper
2 boneless, skinless chicken breast, pork tenderloins or fish steaks

Procedure:

Prepare marinade by combining all ingredients except the meat in a glass baking dish or plastic bag.  Add the meat and allow to marinate for at least 5 minutes per side (total of 10 minutes, at least)  Bake at 350 in oven, or place on grill, turning once after 15 minutes.  Total cooking time about 30 minutes or more depending on thicknes of cut of meat.
