This makes 2 serving but is easy to make larger number of servings
Ingredients:
1/4 cup chopped walnuts
6 leaves green leaf lettuce
1/2 cup fresh blueberries
2 Tbsp vinaigrette dressing OR combine 4 tsp olive oil with 2 tsp lemon juice - whisk or shake
Procedure:
Toastt the chopped walnuts in a suatee pan over med heat, until golden. Stir frequently. Remove from heat and
set aside. Wash and tear lettuce into bite size pieces and place in serving bowl. Add blueberries and now cooled
toasted walnuts, add vinaigrette and toss before serving.
