Pasta Salad with Sunchokes

A full meal, for 4 people.

Ingredients:

1 16 oz package small pasta, such as orzo, cooked and drained
1 cup chopped sunchokes
2 cups diced cooked chicken/turkey/ham/shrimp
3 green onions, chopped
1 medium bell pepper, seeded and chopped
2 to 3 cups fresh vegetables (snap peas, carrots, celery, mushrooms, broccoli, whatever is in season)
 
Dressing
1/3 cup olive or canola oil
3 Tbsp wine vinegar
3 Tbsp soy sauce
2 Tbsp hoisin sauce
 

Procedure:

Whisk the dressing ingredients together and pour over the salad vegetables, tossing to coat.  This may be served over a bed of greens such as spinach or lettuce and sprinkled with 1/4 cup chopped nuts or chow mein noodles
