Buckwheat Pancakes

Makes 2 large servings or 4 small servings

Ingredients:

1 cup milk
1 Tbsp apple cider vinegar
3 Tbsp cooking oil
1/2 cup buckwheat flour
4 Tbsp all-purpose flour
1 Tbsp sugar
1 Tbsp baking powder

Procedure:

Add the vinegar to the milk and set aside for about 10 minutes while you combine and mix together the flours, sugar and baking powder.  In a mixing bowl, whip the oil and beaten egg into the milk mixture and then gently stir in the dry ingredients.  The batter may be a little lumpy but you do not want to overmix this.  Allow the batter to stand for 10 minutes.  Heat an oiled griddle or skilled to medium high and pour batter to desired pancake size.  Cook 2 to 3 minutes on each side.

2 to 4 servings
