Spicy Turkey Sausage

I use this like a bulk sausage or roll sausage, for breakfastt patties and cooked and crumbled for pizza topping.   Ground white turkey meat is the lowest in fat, but this can also be made with ground dark meat which is usually more economical.

Ingredients:

1 1/4 pounds ground white turkey meat, uncooked

1 1/2 tsp ground black pepper, or to taste

1/2 tsp sage

1/2 tsp thyme

1/2 tsp ground ginger

1/2 tsp ground nutmeg

1 Tbsp Calvados or apple brandy or concentrated apple juice

1 1/2 Tbsp freshly grated orange peel or zest

olive oil cooking spray

Procedure:

Thoroughly mix ground meat and all ingredients except the cooking spray.  Spray a large skillet with the cooking spray and heat over medium high heat, immediately adding the formed patties or all of the sausage mix.  Patties should be about 1/2 inch thick, browned on both sides.  To make crumbled bulk sausage, keep stirring the browning meat and break it up into small pieces.  Serve the patties hot from the pan or allow crumbled sausage to cool before spreading over pizza dough
