Pork Fried Rice

Using leftover cooked pork, precooked long grain or brown rice, this is a quick and easy meal with the addition of a side salad and fruit dessert.

Ingredients:

3 Tbsp cooking oil
1 cup finely diced onion or chopped green onion
2 cup cooked lean pork, trimmed and finely diced
2 cups finely chopped sunchokes
2 cups cooked rice
 

Procedure:

Prep the ingredients first.  Heat oil in large pan or wok and add the prepared ingredients.  Stir, stir, stir, until lightly crisped, 10 to 15 minutes.  Serve hot
