Barbeque Sirloin

This is actually an overnight marinade for top sirloin roast, imparting an authentic smoky flavor to the meat when cooked on a charcoal grill.  Reasonably low fat, no added salt, but if you are super salt conscious, be sure to use ground chilis or ground anchos and not commercial chili powder, which does contain salt.

Ingredients:

1 Tbsp chili powder
2 tsp minced fresh ginger root
2 cloves garlic, minced
1 small onion, finely minced
1/3 cup lemon juice
2 Tbsp olive oil
2 tsp paprika
2 pounds boneless top sirloin steak/roast, very well trimmed of all visible fat but not cut into steaks or smaller pieces

Procedure:

Place everything but the steak into a resealable plastic bag and mix well.  Add the steak and refrigerate overnight.  Grill about 6 inches above hot coals on a charcoal grill, or on medium for a gas grill.  Turn once.  Total cooking time - Rare, 15-20 min, Medium 25-30 min, Well Done 35-40 min.  Carve into thin slices before serving
