Grilled Rabbit

Marinated overnight in the refrigerator, with no added salt or sugar to the marinade, this is tasty, tangy and sweet at the same time.

Ingredients:

Marinade
2 Tbsp olive oil
2 cloves garlic, smashed
2/3 cup orange juice
2 Tbsp dried parsley
1 tsp orange zest
1 tsp lemon zest
1 tsp dried oregano
1/2 tsp ground black pepper
 
 
1 rabbit, about 2-3 pounds, cut up into pieces

Procedure:

Place all the marinade ingredients in a large zip top plastic bag, shaking to mix well, add the rabbit pieces and refrigerate, at least 2 hours, or overnight.  Grill about 10-15 minutes per side, turning once, until juices run clear.

Serving Size: Based on 5 servings, with the marinade used as a basting sauce during cooking, each serving contains approximately;
