Zucchini Herb Bread - Bread Machine

Back to Summer Squash & Zucchini

This is a small (one and a half pound) loaf, full of whole grains and flavors.  You can use frozen and thawed grated zucchini for this recipe, just be sure that the zucchini is room temperature and all the excess water is squeezed out, first.

Ingredients:

1/2 cup warm water
2 tsp honey
1 Tbsp olive oil
3/4 cup seeded and grated zucchini
3/4 cup whole wheat graham flour
2 cups all-purpose or bread flour
1/2 tsp dried basil or rosemary
2 tsp sesame seed or flaX seed
1 1/2 tsp fast acting yeast

Procedure:

Fill bread pan according to manufacturers directions OR place water, honey and oil in pan.  Choose Basic or Bread cycle, turn on and then gradually add remaining ingredients in order listed.

Serving Size:  Based on 8 slices per loaf - each slice contains approximately
179 calories, 5 g protein, 2.6 g fat (0 g saturated), 34 g carbohydrate, 20 mg sodium, 0 mg cholesterol
Diabetic Exchange - 2 bread/starch

8 servings - ideal would be 12 slices, but that never happens in my house,
