Pickling Spice #2

 

Ingredients:

4 cinnamon sticks, 3 inches each

1 dried ginger root, 1 inch long

2 tsp yellow mustard seed

2 tsp whole allspice

1 whole dried red pepper, about 1 1/2 inches long,

2 tsp whole black peppercorns

2 tsp whole cloves

2 tsp dill seed

2 tsp whole coriander seed

2 tsp whole mace, crumbled fine 

Procedure:

Wrap the cinnamon sticks and ginger root in a clean cloth.  Pound until finely crumbled, discarding the stringy parts of the ginger root.  Combine and thoroughly mix all ingredients, store in an airtight glass container out of direct sun.
