Roasted Chicken with Sage Dressing

Comfort food at it's leanest.

Ingredients:

2 cups unseasoned dry bread cubes
1/2 cup chopped onion
1/4 cup chopped fresh parsley (<2 Tbsp dried)
3 Tbsp chopped fresh sage (1 Tbsp dried)
1/4 cup egg substitute
3/4 cup unsalted chicken broth
1 3 to 4 pound roasting chicken

Procedure:

In a large bowl, combine bread cubes, onion, parsley, sage and egg substitute.  Add enough broth to moisten.  The stuffing should hold together.  Stuff chicken loosely and place breast side up in a roasting pan.  Bake, uncovered, at 375 F for at least 1.75 hours and up to 2.25 hours and juices run clear.  Baste ocassionally with pan juices if desired.
