Sugar free but not calorie free.  Serving size is one cookie.

Ingredients:

3/4 cup chopped dates
1/2 cup finely chopped peeled apple
1/2 cup raisins
1/2 cup water
1 cup plus 1 Tbsp all-purpose flour
1 tsp ground cinnamon
1 tsp baking soda
2 eggs or 1/2 cup egg substitute
1 tsp liquid artificial sweetener

Procedure:

In a large saucepan (5-6 quart) combine dates, applesraisins and water.  Bring to a boil, reduce heat and simmer for 3 minutes.  Remove from heat and allow to cool.  In a large bowl, combine flour, cinnamon and baking soda.  Stir in cooled apple/date mixture and mix well.  Combine eggs and sweetener and add to batter.  Preheat oven to 350 F .  Drop batter, by the tablespoon, on an ungreased nonstick baking sheet and bake for 10 to 12 minutes.  Cool on wire rack before storing in refrigerator.
