If you just 'have to have' a holiday treat, take 2 of these.
Ingredients:
1/2 cup chopped dates
1/2 cup chopped walnuts
1 3/4 cup all-purpose flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2/3 cup orange juice
1/2 cup vegetable oil, minus 1 Tablespoon
1/4 cup egg substitute
Procedure:
Preheat oven to 375 F and set out 2 ungreased baking sheets. Place dry ingredients in a large bowl, including dates
and nuts, and stir well to combine. In a seperate bowl, mix together the orange juice, vegetable oil and egg substitute
and then mix into the dry ingredients. Drop by teaspoon onto baking sheets and bake about 15 to 20 minutes. Cool
on wire rack before storing.
Serving Size: two cookies contain about 60 calories, 34 g carbohydrate, 7 g fat
