Chicken and Pepper Skillet

This is a low carb meal, but it can be served with steamed rice or pasta if you wish.

Ingredients:

1 Tbsp cooking oil
3/4 pound boneless, skinless chicken breast, cut into half inch strips
2 cloves garlic, finely minced
3 bell peppers, stemmed and seeded, cut into thin strips
2 medium onions, sliced
1 tsp ground cumin
1 1/2 tsp dried oregano
2 tsp chopped fresh jalapeno peppers
3 Tbsp lemon juice
2 Tbsp chopped fresh parsley (1 Tbsp dried)
fresh ground black pepper, to taste

Procedure:

Heat cooking oil in a large non stick skillet, over medium high heat.  Add chicken strips and stir-fry for about 3 to 4 minutes and chicken is lightly browned.  Add minced garlic and cook about 15 seconds longer, stirring constantly.  Stir in bell pepper strips, sliced onion, cumin, oregano and jalapenos.  Stir fry for 2 to 3 minutes and veggies are crisp tender.  Add lemon juice, parsley and pepper, stirring to blend well.  Serve immediately.
