Easy Chicken Parmesan

If low sodium seasoned tomato sauce is not available, use a 'plain' tomato sauce that is low in sodium and add extra seasonings, like Italian Blend etc.  This can also be made with turkey breast or veal cutlets with approximately the same nutrition analysis.

Ingredients:

1 26 oz jar of low sodium seasoned tomato sauce
1 Tbsp Italian Blend Seasoning, or 1 tsp dried oregano and 1 tsp dried basil
1 1/4 pounds boneless skinless chicken breasts
1/2 cup shredded mozzarella cheese, part skim
1/2 cup grated parmesan cheese

Procedure:

Preheat oven to 350 F,  Place about half of the tomato sauce in a large casserole dish or 9x13 baking pan, arrange chicken on top, sprinkle with seasonings and pour the rest of the sauce on top.  Sprinkle mozzarella and then parmesan on top, cover and bake about 30 minutes, or until bubbly cheese is lightly browned.

Serving Size:  1/8th of the recipe yields approximately
153 calories, 5 g fat (2 g saturated), 7 g carbohydrate, 22 g protein, 51 mg cholesterol, 533 mg sodium, 1 g dietary fiber
