Turkey and Apple Gyros

This is stir-fry for a warm meal, but can be microwaved for a warm lunch the next day, if the yogurt dressing is not added until after heating.

Ingredients:

1 medium Golden Delicious apple, cored and thinly sliced
2 Tbsp lemon juice
1 cup thinly sliced onion
2 cups bell pepper, cut into thin strips
1 tsp olive oil
8 ounces (weight) or about 1 1/2 cups cooked turkey breast, cut into thin strips
6 whole wheat pita bread rounds, lightly toasted or warmed
1/2 cup plain, low fat yogurt
1 garlic clove, finely minced

Procedure:

Toss apple slices with lemon juice and set aside.  Heat oil in a large non stick skillet and saute onion and pepper slices until just crisp tender, about 3 minutes.  Add turkey strips and stir until heated through.Stir in apple slices and lemon juice.  Stir minced garlic into yogurt as the dressing, set aside.  Fold pitas in half and fill with turkey mixture, drizzle with yogurt dressing.

Serving Size:  one sixth of recipe is approximately
