Sweet Potato Bread

This uses cooked and mashed sweet potatoes but it is not a low calorie food, providing almost 3 servings of carbohydrate per serving.

Ingredients:

2 medium sweet potatoes, peeled and cooked
2 Tbsp low calorie margarine
3 Tbsp sugar or equivalent artificial sweetener
1 tsp ground nutmeg
1 1/2 tsp ground allspice
1/4 tsp salt
5 Tbsp all-purpose flour
1 cup egg substitute

Procedure:

Preheat oven to 425 F.  Boil sweet potatoes until soft, thoroughly mash and stir in margarine.  Mix remaining ingredients into sweet potatoes and pour batter into a nonstick loaf pan.  Bake for about 30 minutes, or until a knife inserted into the center comes out clean.  Serve warm.
