Blackened Tilapia

I eliminate the melted butter and brush the fillets with olive oil before coating with seasoning mixture.

Ingredients:

1 pound tilapia fillets, about 4 to 6 fillets
2 Tbsp paprika
2 tsp lemon pepper
1 1/2 tsp garlic powder
1/2 tsp ground red pepper
1 1/2 tsp crushed dried basil
1 tsp onion powder
1 tsp dried thyme
1 cup melted butter

Procedure:

Rinse fillets and pat dry with paper towel.  Combine seasonings in plastic bag or on plate, mixing well.  Dip each fish fillet in melted butter, then coat with seasonings.  Heat a cast iron or other heavy skillet over high heat, getting it good and hot.  Flash fry each fillet with no oil added to the pan, for about 2 minutes on each side.  Serve immediately.
