Banana Oatmeal Pancakes

Portion control is a scant 1/4 cup of batter for one pancake, and a serving is 3 pancakes.

Ingredients:

2 bananas, peeled sliced
1 Tbsp granulated sugar (optional)
1 cup all-purpose flour
1/2 cup oats, uncooked
1 Tbsp baking powder
1/4 tsp ground cinnamon
1 cup fat free milk
1/4 cup egg substitute
2 Tbsp vegetable oil
nonstick baking spray

Procedure:

If you are using the optional sugar, place banana slices and sugar in a small bowl and stir to coat the slices with sugar.  Set aside. The banana slice will be added to the batter once it is in the pan cooking.  Mix the dry ingredients together in a large bowl and mix the wet ingredients in a small bowl.  Before you combine and mix them together, lightly spray your pan/griddle with cooking spray and place over medium high heat.  Mix dry and wet ingredients together, but do not over-mix, some small lumps are OK.  Using a 1/4 cup measure, place batter onto cooking surface, top each pancake with 4 or 5 banana slices.  Turn pancakes when bubbles appear on tops and edges appear cooked.

Serving Size:  A serving of 3 pancakes, each made with 1/4 cup of batter, is approximately
