Packaged stuffing mixes contain way too much salt and preservatives. If you make your own bread, with no added
salt, or just use store bought bread, you are still doing your heart a favor, and you are in charge of what is in the food
you eat.
Ingredients:
4 cups whole grain bread cubes, about 1/2 to 3/4 inch cubes
2 Tbsp olive oil
1 medium onion, finely chopped
2 celery stalks, chopped
2 Tbsp dried oarsley (1/4 cup chopped fresh)
1/2 tsp dried thyme
1 tsp dried sage
1 tsp dried basil
1/2 tsp dried oregano
fresh ground pepper, to taste
Procedure:
Heat olive oil in a large skillet and saute the onion. When onion is translucent, but not browned, stir in the seasonings
and then the bread cubes. It may be necessary to moisten the bread cubes with about 1/2 cup, or so, of water, to ensure
that the seasonings stick to the bread cubes. Loosely stuff your prepared chicken and bake about 1 hour at 350 F, uncovered.
