Sloppy Joes

If you are watching your intake of red meat, this can be made with ground white chicken or turkey meat.  Serve over a toasted bun with a green salad, and you have a healthy meal.

Ingredients:

1 pound lean ground meat such as beef, chicken or turkey
1/2 cup water
1 cup no salt added ketchup OR 1 cup tomato sauce plus 1 to 2 Tbsp white vinegar
4 hamburger or hot dog buns, split open
 

Procedure:

Brown the meat in a large skillet, adding a little cooking spray to the pan if using very lean meat.  Break up the meat into crumbles as it is cooking and pour off the fat, if there is any.  Add seasoning mix, water, ketchup or tomato sauce and vinegar and reduce heat to simmer.  Simmer over low heat for at least 10 minutes.  If the sloppy joes become too thick, add a tablespoon or two of water, before it burns.  Serve over split hamburger or hotdog buns, one bun per person.
