As a side dish or soup course of about 1 1/2 cups each. As a main course, add almost any type of cooked meat for
the last hour or 2 in the crockpot. This makes 8 side dish servings, which can be frozen in individual containers and
then warmed up at a later date (after thawing first) to make a full meal with the addition of cooked and chopped meats.
Ingredients:
4 cups low sodium tomato juice
2 1/2 cups chopped zucchini (2 medium) OR frozen and thawed zucchini
3 1/2 cups reduced sodium chicken broth
1 1/2 cups coarsely chopped sweet bell pepper (red or yellow, or both)
1 cup chopped onion
1/2 cup regular, uncooked barley
1/4 tsp ground black pepper
3 cloves garlic, minced
Procedure:
Combine all ingredients in a 3 1/2 to 5 quart crockpot, cover and cook on low for 8 to 9 hours, or on high for 4 to 4 1/2
hours.
Serving Size: a side dish serving of about 1 1/2 cups contains approximately
