Dark Rye Bread (Pumpernickel)

This is a dense loaf, about one half to one third as tall as a lighter loaf.

Ingredients:

1 1/3 cup warm water
2 Tbsp sugar
2 Tbsp oil
1 1/2 cups all-purpose flour
2 1/2 tsp instant or bread machine yeast
1 1/2 Tbsp vital wheat gluten
1 1/2 Tbsp unsweetened cocoa powder
2 tsp caraway seeds
1 3/4 cup coarse or pumpernickel rye flour

Procedure:

Bread machine should be set on Dark or Whole Wheat Bread cycle.  Place warm water, sugar and oil in bread pan, measure and set aside the all-purpose flour and then assemble remaining ingredients, in order given, in a medium size bowl.  Turn machine on, mixing until sugar is dissolved, then add the all-pupose flour.  Once a dough has formed, add the remaining ingredients, close lid and let the machine cycle through.
