Banana Yeast Bread

A good way to use up extra and/or over ripe bananas, in the bread machine.

Ingredients:

2 ripe bananas, peeled and mashed
3/4 cup warm water
1 Tbsp sugar
2 Tbsp olive oil
3 cups all-purpose or bread flour
1 Tbsp vital wheat gluten
2 1/2 tsp instant, fast acting or bread machine yeast

Procedure:

Machine should be set on Bread - Whole Wheat

Place mashed bananas, water, sugar and oil int the bread pan.  Turn on, add the flour and vital wheat gluten and then the yeast.

Serving Size:

1 loaf, 12 slices

2 - 2 1/2 Pound Loaf
 
1 cup lukewarm water
3 small bananas, peeled and mashed
3 Tbsp olive oil
2 Tbsp sugar
1 tsp almond extract
4 cups all-purpose flour
2 Tbsp vital wheat gluten
1 Tbsp active dry yeast
 
An additional 1-2 Tbsp flour may be needed if dough is too sticky after mixing.
