No fuss, no muss and very little clean-up. Use ground bison, beef, chicken, lamb or turkey, add in sliced onions
and any seasoning (except SALT) that looks interesting to you. A liberal dose of Zesty Seasoning, or Seasoned 'Salt' or a sprinkle of thyme and oregano with ground black pepper works well for us. Wrap in foil packets and cook on
the grill or in the oven, or several layers of foil and throw onto the coals in the campfire.
Ingredients:
1 pound potatoes (can be white/red or sweet potatoes) cut into thick slices - about 4 medium/small
1 pound carrots, sliced to same thickness as potatoes - about 4 large
1 large onion, sliced thin (optional)
1 pound ground meat
seasoning of choice
1 tsp olive oil (divided to a drip on each piece of tin foil for the packets)
4 sheets of heavy duty tin foil
Procedure:
To make 2 large servings or 4 small serving size packets, place a little olive oil on each sheet or foil that is large
enough to wrap and seal once ingredients are placed in it. Then add sliced potatoes, carrots, onions (if desired) and
top with 1/4 or 1/2 of the ground meat, after patting into a thick patty shape, adding the seasonings last. Wrap and
seal tightly, wrapping in a second layer of foil if you are not positive of a good seal. Bake in oven at 350 for 40-50
minutes or on a low grill heat for about 30-40 minutes. Not brown and crispy like a burger, but twice as juicy and tasty.
