Southwest Bean & Corn Salad
No fat free Thousand Island dressing on hand? Make your own with fat free mayo, pickle relish, paprika
and a dab of ketchup. Taste and adjust seasonings.
Prep time for this is only about 15 minutes, but flavors improve with an hour or two of chilling.
Ingredients:
1/2 cup fat free Thousand Island dressing
4 cups shredded lettuce or swiss chard
1 - 15 ounce can black beans, drained and rinsed
1 - 10 ounce package frozen whole kernel corn, thawed and drained
1/2 cup thinly sliced red, green, or yellow bell pepper
1/2 cup thinly sliced red, white or yellow onion
Procedure:
Toss everything together in a large bowl, cover and refigerate for an hour or two before serving.
Serving Size: 1/4 of total recipe
