Overnight Stuffed French Toast

Although this makes 12 servings, it will keep for several days in the refrigerator if tightly wrapped and then warmed in the microwave for a few seconds.  Much more nutritional than toaster pastries.

Ingredients:

1 - 1 pound loaf of French bread, cut into 20 slices
1 - 8 ounce package fat free cream cheese
3 cups liquid egg substitute
2 cups skim milk
1 tsp vanilla extract
1/3 cup sugar free maple flavored syrup
1/4 tsp ground cinnamon

Procedure:

Using cooking spray, coat a 9x13 inch baking dish.  Layer 10 slices of bread across the bottom, cutting to fit as needed.  Thinly slice the cream cheese and layer evenly over the bread slices, placing the remaining bread slices on top.

In a large bowl, whisk together the egg substitutes, milk, vanilla extract, syrup and cinnamon.  Pour over the bread and cream cheese and loosely cover with plastic wrap or foil and refrigerate for at least 8 hours.

After 8 hours, let the pan stand at room temperature while the oven preheats to 350 F, about 15 minutes, and then bake for about 1 hour, or until the center is set.  If the edges are browning too quickly, layer a sheet of aluminum foil over the pan for the last few minutes.  Let stand for a few minutes and then cut into 12 pieces about 3x3 inches.
