Mystery Marmalade

Although not processed in either a boiling water bath or presssure canner, if you put into hot, sterilized jars, with hot metal lids and screw bands, jars will seal as they cool.  Half-pint jars are great as gifts.

Ingredients:

1 1/2 pounds carrots, washed and frated, about 4 cups
2 lemons, grate the peel and then juice them
3/4 cup sugar

Procedure:

Cook the grated carrots in just enough water to cover, either on the stovetop or in the microwave, until just soft, about 15 minutes on the stovetop.  Drain well, add lemon juice and grated peel, stir in sugar and cook over medium heat until it starts to boil, stirring often.  Reduce heat and keep mixture at a slow boil for 45 minutes, stirring as often as possible so that it does not burn.  Have jars, lids and screw bands ready.  Pour into jars immediately, add lids and adjust screw bands.  Let cool out of drafts for several hours. 

Serving Size:
Makes 3 half pint jars with some left for immediate use
