Hot, Hot Chocolate Mix

This makes a rich and cramy hot chocolate, enhanced by the cayenne pepper.  Use less cayenne if your taste is especially tender or the recipient is a youth. 

Attractive containers can be found at flea markets and thrift stores, at reasonable prices and long cinnamon sticks are available at specialty spice stores or mailorder and online spice markets.

Ingredients:

3 pounds bittersweet or semisweet chocolate
1 pound plus 2 ounces whole dry milk
cayenne pepper, about 2 tsp or less
long cinnamon sticks, 10 to 12 inches
This recipe makes 16 servings, so if you want each serving to have it's own cinnamon stick, adjust quantity.

Procedure:

Finely grate the chocolate.  This is easier if the chocolate is chilled first.  In a large bowl, combine grated chocolate, milk powder and cayenne pepper, stirring well.  Spoon into your prepared gifting containers and label with the instructions to use 1/2 cup of hot chocolate mix to 1 cup of milk or water, heating to boiling point for at least 15 seconds, and stir with cinnamon stick.  Add a marshmallow if desired.

Serving Size:
1/2 cup to 1 cup milk or water
